Greek Chicken Bowls

Ingredients

  • 1.5–2 lbs chicken breast or thighs
  • 2 tbsp olive oil
  • 2 cloves garlic (minced) or 1 tsp garlic powder
  • 1 lemon juice
  • 1 tsp oregano
  • Salt + pepper

Bowls:

  • Cucumber (chopped)
  • Cherry tomatoes (halved)
  • Feta cheese
  • Tzatziki sauce
  • Rice

Steps:

  1. Preheat oven to 400°F.
  2. Put chicken in a bowl.
  3. Add olive oil, garlic, lemon juice, oregano, salt, and pepper.
  4. Mix it all up.
  5. Bake for 20–25 minutes until no longer pink inside.
  6. Let chicken rest for 5 minutes, then slice it.

Build the bowls

  1. Put rice in the bottom
  2. Add chicken.
  3. Add cucumbers, tomatoes, and feta.
  4. Add tzatziki on top.
