Ingredients
- 1.5–2 lbs chicken breast or thighs
- 2 tbsp olive oil
- 2 cloves garlic (minced) or 1 tsp garlic powder
- 1 lemon juice
- 1 tsp oregano
- Salt + pepper
Bowls:
- Cucumber (chopped)
- Cherry tomatoes (halved)
- Feta cheese
- Tzatziki sauce
- Rice
Steps:
- Preheat oven to 400°F.
- Put chicken in a bowl.
- Add olive oil, garlic, lemon juice, oregano, salt, and pepper.
- Mix it all up.
- Bake for 20–25 minutes until no longer pink inside.
- Let chicken rest for 5 minutes, then slice it.
Build the bowls
- Put rice in the bottom
- Add chicken.
- Add cucumbers, tomatoes, and feta.
- Add tzatziki on top.
