Chicken Parmesan

Ingredients

  • 1.5 lbs chicken breasts
  • 1 cup panko breadcrumbs
  • ½ cup parmesan cheese
  • 1 egg
  • 1 jar marinara
  • 8 oz mozzarella
  • ½ lb higher protein spaghetti

Directions

  1. Heat oven to 425°.
  2. Slice chicken breasts in half horizontally.
  3. Beat egg in bowl.
  4. Mix breadcrumbs and parmesan in another bowl.
  5. Dip chicken:
    • Egg
    • Breadcrumb mixture
  6. Place on baking sheet.
  7. Bake 20 minutes.
  8. Remove from oven.
  9. Top each piece with:
    • Marinara
    • Mozzarella
  10. Return to oven 5 minutes.
  11. Cook spaghetti while chicken finishes.
  12. Serve with salad.
