Ingredients
- 1.5 lbs chicken breasts
- 1 cup panko breadcrumbs
- ½ cup parmesan cheese
- 1 egg
- 1 jar marinara
- 8 oz mozzarella
- ½ lb higher protein spaghetti
Directions
- Heat oven to 425°.
- Slice chicken breasts in half horizontally.
- Beat egg in bowl.
- Mix breadcrumbs and parmesan in another bowl.
- Dip chicken:
- Egg
- Breadcrumb mixture
- Place on baking sheet.
- Bake 20 minutes.
- Remove from oven.
- Top each piece with:
- Marinara
- Mozzarella
- Return to oven 5 minutes.
- Cook spaghetti while chicken finishes.
- Serve with salad.
