Ingredients
- 10 large eggs
- 1 cup low-fat cottage cheese
- ½ cup Fairlife whole milk
- 1 cup shredded Monterey Jack cheese
- 6 turkey sausage links, cooked and diced
- ½ tsp salt
- ¼ tsp pepper
Equipment
- Blender
- Silicone muffin pan
- 9×13 baking dish
Step 1: Blend
Put into blender:
- Eggs
- Cottage cheese
- Fairlife milk
- Monterey Jack
- Salt
- Pepper
Blend 30-45 seconds until completely smooth.
You shouldn’t see cottage cheese curds anymore.
Step 2: Add Sausage
Place diced sausage in silicone muffin cups.
Pour egg mixture over top.
Fill about 80% full.
Step 3: Water Bath
Place silicone muffin pan inside a 9×13 pan.
Pour hot water into the larger pan until it comes about halfway up the sides of the muffin pan. (This creates steam and prevents the eggs from becoming rubbery.)
Step 4: Bake
Bake at 300°F for 30-35 minutes.
Start checking at 28 minutes. The centers should:
- Look set
- Jiggle slightly
- Not brown
If they brown, they’re overcooked.
Leave them in the pan 10 minutes before removing.
They’ll finish setting as they cool.
