Crockpot Salsa Chicken Tacos

Cook Time: 5–6 hours on low

Ingredients

  • 2.5–3 lb boneless, skinless chicken breasts
  • 1.5 cups salsa
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 packet taco seasoning
  • 1.2 cup chicken broth
  • 4 oz cream cheese, optional

For Serving

  • Flour tortillas
  • Shredded lettuce
  • Mexican cheese
  • Avocado
  • Salsa
  • Greek yogurt or sour cream

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Sprinkle taco seasoning over the chicken.
  3. Add salsa, chicken broth, black beans, and corn.
  4. Cover and cook on LOW for 5–6 hours, or until the chicken shreds easily.
  5. Remove the chicken and shred – I use the beater method. Shred it up with your handheld mixer.
  6. Return the chicken to the crockpot and stir everything together.
  7. If using cream cheese, add it during the final 20–30 minutes and stir until completely melted and incorporated.
  8. Serve in warm tortillas with your favorite toppings.
