Ingredients
- 2–2.5 lbs boneless, skinless chicken breasts
- 1 jar marinara sauce
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1/2 cup grated Parmesan cheese
- 1.5 cups shredded mozzarella
- Salt and pepper
- 12 oz protein pasta
- 3 cups broccoli
- Optional: fresh parsley
Directions
- Place chicken breasts in the crockpot.
- Season with Italian seasoning, garlic powder, salt and pepper.
- Pour marinara sauce over the chicken.
- Cover and cook on LOW for approximately 4–6 hours, or until the chicken reaches 165°F and shreds easily.
- Shred the chicken with two forks or leave the breasts whole, your preference.
- Sprinkle Parmesan cheese over the chicken.
- Top with shredded mozzarella.
- Cover and cook for another 10–15 minutes, until the cheese is melted.
- Meanwhile, cook the protein pasta according to the package directions.
- Steam or roast the broccoli.
- Serve the chicken and sauce over pasta with broccoli on the side.
Tuesday is officially the craziest night of our week, with both boys at soccer and my own run and strength workout squeezed in. So I’m letting the crockpot do the work with a family-friendly Chicken Parmesan that also solves Wednesday’s dinner problem.
